This harissa roasted chicken thighs with feta cheese and Greek yogurt is a one-sheet keto dinner recipe straight out of my brand new Keto Sheet Pan Dinners Cookbook!
Harissa Chicken Traybake
It’s a delicious mix of simple chicken thighs, salty smooth feta cheese, spicy yogurt, red peppers and dill which come together to form the best flavour combination EVER!
Who doesn’t love chicken thighs?
Chicken is just one of those universal proteins that most people love. The best part about chicken is that it doesn’t contain all that much flavour… which means that you can ADD so much flavour without overcomplicating the balance.
Most grocery stores here in Australia sell chicken thigh that is removed from the bone, and has had the skin removed. If chicken thighs in your grocery store only have bone in skin on types, it’s very easy to adjust the cooking time with an instant read thermometer.
Using Thermometers In Your Oven
I use a thermometer called the ThermoPro TP20, which has been such a handy tool when cooking all types of different proteins. You can also use an instant-read thermometer, but it requires that you remove the sheet pan from the oven constantly, or open the door (which lets all the heat out)
The ThermoPro is great, because the probes can stay in the meat, you can close the oven door, and the alarm on the device goes off when the meat is perfectly cooked.
You can use this thermometer for everything from BBQing to closed oven cooking, and has recently been one of the best investments I’ve made for my kitchen.

Sheet pans, or sometimes known as baking trays, are super versatile and easy to throw a whole bunch of ingredients in to then throw in the oven without any extra hassle.

What If You Cannot Find Skinless Chicken Thighs?
If you cannot find boneless skinless chicken thighs, you will need to adjust your cooking time to accommodate an internal temperature of 74 C (165 F) for bone-in chicken thighs.
Will this recipe last in the fridge?
This recipe is perfect for meal prep, and I have made it almost every week since I created the recipe!
It will keep for up to 5 days in meal prep containers in the fridge or in the freezer for 1 month.
Tip!
If you are unable to find harissa paste, any hot chilli paste will work as a replacement.

Harissa Roasted Chicken Thighs with Greek Yogurt and Feta Cheese
Ingredients
- 3 small red bell peppers sliced
- 3 cloves garlic minced
- 1 small onion sliced
- 4 large chicken thighs skinless, boneless (600 g/1.3 lb)
- 3 Tbsp olive oil
- ½ tsp salt
- ½ tsp ground black pepper
- 3.5 oz Greek yogurt 100 g
- 1 Tbsp harissa paste
- 3.5 feta cheese crumbled (100g)
- 5 sprigs dill chopped
Instructions
- Line a 15-inch X 10-inch (38 cm X 25 cm) baking sheet with a piece of parchment paper. Preheat a fan forced oven to 200 C (400 F).
- Place the bell peppers, garlic, and onion on the baking sheet. Place the chicken thighs over the vegetables. Drizzle with the olive oil and season with the salt and pepper.
- Roast for 20 minutes or until the internal temperature of the chicken reaches 74 C (165 F).
- In a separate mixing bowl, combine the Greek yogurt and harissa paste. Set aside.
- Remove the chicken from the oven and let it cool for 5 minutes. Top it with the crumbled feta cheese, chopped dill, and a side of harissa-infused yogurt.
