Using Gelatin For Gut Health

You might be used to using gelatin in cooking, but you probably haven’t used it for gut health?

Gelatin powder is actually hydrolysed collagen and can have an impact on your skin health, sleep, and mental health as well. The beneficial aspect of gelatin comes mainly from its glycine content.

If you are a strict carnivore, or you eat plenty of meat and animal products, you will have high methionine levels which in turn, boost your homocysteine levels. High homocysteine levels are a risk factor for serious diseases like heart disease, stroke, mental illness, and fractures.

Consuming plenty of gelatin will help balance out your homocysteine levels because glycine is able to neutralise homocysteine.

Gelatin also has a healing effect on your gut health by restoring a healthy mucosal lining in the stomach and aiding in gastric acid secretion.

I won’t go on too much about the benefits of glycene here too much, but just know that if you’re having trouble with your skin, sleep, joints or mental health, gelatin is going to be able to help.

Best Keto Electrolyte Powder

I have tried many electrolyte powders, and there are many pros and cons to using certain brands. The biggest factors that you might be concerned about when it comes to a ketogenic diet is:

  1. Is it low carb? (since carbs are a precious commodity on keto)
  2. Is it affordable? (as you’ll likely be taking it daily)

There are a few different brands that I tend to recommend to my clients, plus there is a homemade version which you can make using ingredients you might already have:

Ultima Electrolytes

Pros – I haven’t used ultima for a long time, but in my short experience, the flavours taste amazing. They are sweetened with natural stevia, which is fantastic because it doesn’t contain sugar alcohols, and they come in single servings or big tubs, depending on your preference.

Cons – They aren’t cheap, and if you live in Australia, you’ll likely have to by them online (postage can add up).

Endura Low Carb Electrolytes

Pros – I used this electrolyte drink extensively whilst training for my keto marathon, and it was great! Most sports stores will have this in stock, so you’re saving on postage, and it tastes fantastic also. It’s about mid-range in terms of cost, so this could definitely be an advantage over Ultima.

Cons – They only have 2 flavours (to my knowledge), so you might get over that taste quite quickly.

Homemade Electrolytes

Recipe:

  • 1 cup of water
  • 1 tsp lemon juice (Limonoids have anti-cancer properties)
  • 1 Tbsp Apple cider vinegar (for its beneficial effect on blood sugar levels)
  • 1/4 tsp cream of Tatar (which is potassium)
  • 1/4 tsp baking powder (which is mainly calcium)
  • 1/2 tsp salt (sodium)
  • Optional liquid stevia drops for sweetness

You will also need to supplement daily with magnesium if you chose this option.

Pros – This option is cheap and highly accessible. You probably have everything you need (maybe except for cream of Tatar), so you can start today. You have the option of dialling up or down certain micronutrients if necessary, so it’s a more custom friendly option.

Cons – It tastes really bad. There is no way around this, it won’t taste good. However, if you’re living life on the cheap side, this is your best option.

Other Keto Electrolytes

Here are some other electroytes which I have done research on, but never tried:

  • Bulk Nutrients Carb Free & Sweetener Free Electrolytes (apparently tastes bad also, but I would expect it to taste similar to the homemade recipe)
  • Aldi has an electrolyte supplement which is cheap, but it contains 2g of carbs per serve, so this may not be a great option for everyone
  • Hydralyte also does an electrolyte supplement which you can easily get at coles and Woolworths, but again, contains 2-4g of carbs per serve I believe.

Why Use Electrolytes For Keto?

When you go keto, the body no longer stores as much glycogen (energy from carbohydrates), which reduces the amount of water the body can hold.

The downside of reducing your glycogen levels is that you might lose many important minerals when water weight is reduced. This means that you have to pay close attention to your electrolytes on a ketogenic diet.

Ensuring that you drink electrolytes on a regular basis can help ward off nasty side effects of being in ketosis such as headaches, muscle cramps, joint pain and lethargy (all typical symptomps of dehydration or mineral imbalances)

Best Way To Get Electrolytes On Keto

Honestly, I love making this jelly recipe for meal prep, especially if I’m going through a weight loss phase. I used this jelly recipe a lot when I went from 25% body fat to 15% body fat this year.

It adds a small amount of protein to your macros, but since there is generally a lot of volume in the recipe, it’s a great way to fill up after dinner without eating more carbs or fats, which can be problematic in a weightloss phase.

  • Pour in the remaining 2 cups of cold water and mix. Pour this mixture into 3 jars and set in the fridge for at least 6 hours (or overnight is best)
  • Will keep for 2 weeks in the fridge.

How to make a keto smoothie

Making keto smoothies can come in all different shapes and sizes.

You can add yogurt, protein powder, or play mix and match between coconut milk or almond milk.

The beauty of a good smoothie really lies in the ingredients you have available, and the ingredients you find delicious.

Don’t ever let anyone tell you your smoothie is “wrong”. There should be no food shaming EVER.

Flavour Combinations

This smoothie gives you plenty of energy, plus the flavours of vanilla and blueberries are an absolute flavour aficionado.

The original recipe was made with yogurt and protein powder together, in combination with MCT oil, and coconut milk.

I’ve made this with almond milk, vanilla extract, ice and no ice, honestly, they all taste great, so get creative with your smoothie recipes!

This smoothie is a little lighter in comparison to other traditional keto smoothies, so if you’re looking for a super thick smoothie, I suggest you try out my avocado green smoothie.

Health Benefits and Micronutrients

Antioxidants

Blueberries provide an excellent source of antioxidants which effectively “mop” up the free radicals caused by oxidative stress (exercise).

This keto smoothie used as a post-workout refuel option not only helps the recovery process but tastes pretty good too!

Folate

Folate, or known as vitamin b9 – is a very important mineral for pregnant women, supporting normal fetal development by decreasing the risk of neural tube defects.

Nutritionist Tip!

Men also need folate for sperm with correct chromosomal structure! Folic Acid also supports the regulation of cholesterol as found by a polish study.

Vitamin C

Vitamin C is a powerful anti-inflammatory which aids in immune system support, as well as creating correct vassal dilation, which in turns helps rectify high blood pressure.  

Vitamin C is also used to prevent scurvy, but scurvy only occurs when your diet is completely devoid of any vitamin C (like being on a ship for 12 months with nothing but slop for food).

It’s not something you need to worry about these days!

Recipe Tips:

Suitable Substitutions

  • MCT Oil – If you don’t have any MCT oil that’s totally fine, you can replace this with coconut oil, or any fat you like.
  • Blueberries – Any berry will work (blackberry, raspberry, strawberry) and will have a similar carbohydrate content.
  • Protein Powder – If you don’t have protein powder, you can simply omit this from the recipe. If you still want a fluffy texture, you could try adding a raw egg, but these can sometimes contain salmonella on the eggshell, so pregnant women should avoid this.
  • Milk Alternatives – I’ve made this with unsweetened almond milk, unsweetened coconut milk, pea milk, and they all taste similar. Just find milk you like, and use that.
  • Regular milk (cows milk) has a large amount of naturally occurring sugars (called lactose) which will increase the carbohydrate level of your smoothie, so just watch out for that one.
  • Like to put ice in your smoothie? ice or no ice, it all tastes great, so get creative with your smoothie recipes!

Eggnog’s Origins

Traditionally, this custard-based drink is packed with sugars and various flavored syrups. This drink has been around since the 13th century, with culinary historians zeroing in on early medieval Britain’s drink called posset. It was a hot, milky ale-like drink that monks favored and drank with eggs and figs.

Sherry became its primary ingredient by the time the 17th century came along, but when this syrupy drink entered the New World, rum replaced the sherry. Eventually, it quickly became a drink of choice for everyone.

Recipe Variations

This rich and spicy alcoholic drink has had its fair share of recipe variations. The basic recipe, though, remains the same. There’s sugar, milk, cream and your choice of distilled spirit that makes it a favorite for holiday get-togethers.

So is eggnog keto-friendly at all? Yes, with this keto eggnog recipe, because it substitutes the usual ingredients with unsweetened almond milk and Monkfruit/Erythritol Blend Sweetener. If you ask again, “Is eggnog keto enough?” Just stick to this sugar-free and healthy recipe and that answer will be a yummy yes!

  • The orange adds amazing flavor to this eggnog and it tastes so good with the bourbon and nutmeg. When peeling the orange, it’s important to get as little of the white pith as possible.

  • This mixture should be cooked on the stove until it reaches about 160 F (71 C) or lightly coats the back of a spoon, but should not boil. If it boils, the eggs will curdle. If the mixture gets too hot and some curdling occurs, you can strain it through a fine-mesh strainer and it should be fine to use, though.
  • I like the combination of rum and bourbon, but you can use all bourbon as well.
  • You can definitely adjust the amount of alcohol in the recipe to suit your taste.

  • 6 eggs

Directions

  • With an electric mixer, beat the eggs until fluffy and pale, about 1 to 2 minutes. In a saucepan, combine the beaten eggs, almond milk, 1 cup of the heavy cream, sweetener and nutmeg. Using a vegetable peeler, remove the zest from the orange being careful to avoid the white pith. Add the zest to the saucepan.
  • Cook the mixture slowly over medium-low heat, stirring constantly for about 7 to 9 minutes, or until the mixture reaches 160 F (71 C) or lightly coats the back of a spoon. You do not want the mixture to boil. Remove the mixture from the heat and place the saucepan in a bowl of ice water, stirring for 2 to 3 minutes until the mixture is room temperature. Stir in the rum, bourbon and vanilla. Chill for 4 to 24 hours.
  • When ready to serve, whip the remaining heavy cream until soft peaks form. Transfer the chilled egg mixture to a punch bowl or pitcher. Fold in the whipped cream and serve immediately. Garnish each cup with grated nutmeg.

Non Alcoholic Version

  • Prepare as above, omitting the rum and bourbon and increasing the almond milk to 2 cups.

One of the things we love to do outside is entertaining, and coming up with “surprise cocktails” for our friends when they show up. yes, low carb beer and vodka sodas are easy, but people are starting to expect MORE from us. (how much pressure is that?!)
It’s fine, we are up for the challenge! It’s officially tequila season and obviously lemonade season, so this cocktail is perfect for your next BBQ, birthday party, or just relaxing on your patio with your pup.

Make sure you juice your lemons ahead of time so you can be out of the kitchen and on that patio entertaining. We make it by the pitcher so its easily accessible and people can make it to their liking.

Homemade Baileys Irish Cream is really easy to make without condensed milk, which is sweetened. This keto baileys copy cat recipe tastes almost identical to the real thing, and you won’t need to worry about being kicked out of ketosis from consuming too many carbs.

Drinking Baileys on a cold evening by the fire is my type of alcohol, but I haven’t been able to drink any since going low carb. Ordinary Baileys contains a whopping 8 g of sugar per serving. This is just too much on top of a day’s worth of trace carbohydrates from food.

 

Alternative Ingredients For Maximum Flavour

You can make this Irish cream with any kind of whiskey, so don’t worry too much about using an Irish brand. I’ve even made this recipe with spiced rum and it tastes delicious.

You could also create a keto Kahlua by substituting the 1/4 tsp instant coffee granules with either 2 tsp of instant espresso or 60 ml of brewed espresso (from a machine if available). Baileys has a chocolate taste, which a little bit of espresso helps enhance. On the other hand, Kahlua requires more coffee and less chocolate.

Low Carb Alcoholic Coffee Drinks

You can use Baileys in many different ways, and more specifically, it can be used in Irish Coffee.

This isn’t a traditional Irish coffee, but a long black with 50 ml of this keto Baileys recipe would give you a delicious version. This is particularly wonderful if you are looking to celebrate St Patrick’s day whilst keeping your carbs low.

Serve Baileys over ice, with milk, or by itself. I’ve taken swigs straight from the bottle (don’t judge) and it’s delicious, but having a fancy glass and a warm fireplace makes it a little more indulgent and sophisticated.

Homemade Baileys Irish Cream

Homemade Baileys Irish Cream is really easy to make without using condensed milk, which is sweetened. This keto baileys copy cat recipe tastes almost identical to the real thing, and you won't need to worry about being kicked out of ketosis from consuming too many carbs.

Ingredients

Instructions

  • In a saucepan set over low heat, combine the heavy cream and erythritol. Heat and stir until the erythritol has dissolved, about 5 minutes.
  • Add the unsweetened cocoa powder, vanilla extract and instant espresso powder to the saucepan, and mix for a further 2 minutes until combined.
  • Remove from the heat and stir in the whiskey until it is completely dissolved into the cream.
  • Pour into a resealable bottle or jar and refrigerate for up to 5 days. Serve chilled over ice when ready to enjoy.

Notes

You can make this Irish cream from any kind of whiskey, so don't worry too much about an Irish brand. I've even made it from spiced rum, and it tastes delicious.

If you love baking, but often get stumped when substituting regular full cream milk, then I’ll teach you how to make milk from heavy whipping cream.

I’ve done some simple mathematics, taste testing and sweetness ratios that will help you create a keto milk substitute that is identical to regular milk.

On a low carb diet, its impossible to have regular milk simply due to the fact that it has 12g plus of sugar per glass. Milk contains a sugar which is called lactose, which over 70% of people actually can’t digest (say the paleo people). Because of this, 12g of sugar is half your carbohydrate intake for the day on a ketogenic diet.

How To Make Milk From Heavy Whipping Cream

Regular Full Cream Milk has 3.5% milk fat

Heavy Whipping Cream has 35% milk fat

*Here in Australia, heavy whipping cream is the same as pure cream or thickened cream*

So… to create a liquid with 3.5% milk fat from cream, you would need 10X less liquid.

This means that to create the fat percentage of 100ml of milk by using cream, you would need 10ml of cream. Then, mixed with 90 ml of water, this gives the total volume of the milk 3.5% milk fat. 

But wait, milk can’t be that simple? You’re right, milk’s flavour comes from the combination of milk fat AND sugar (lactose). For this reason, we need to substitute the lactose for an alternative sweetener, such as erythritol, stevia or monk fruit.

From the taste testing, I’ve done between regular full cream milk, and the keto milk substitute being created here, I’ve found that 1-2 teaspoons of erythritol or 6 drops of stevia will give an approximate sweetness when compared to regular milk.

Tip!

If you are not following a ketogenic diet, feel free to use whatever sweetener you like. If you are following a ketogenic diet, then using a keto-friendly sweetener is important.

No more poorly substituted almond milk or coconut milk in your favourite recipes. You now have the power to create amazing recipes that would have usually required the squint taste test.

Cold brew coffee is a process where the extraction of the coffee happens through cold water, which makes the coffee less bitter and just as delicious. As the weather begins to heat up here in Australia, this brewing method is my new favorite way to enjoy a cup of coffee in the morning.

There are many great benefits to drinking coffee whilst following the ketogenic diet, but here are some points on coffee that will help you understand why coffee in moderation might be your best friend:

1 – Cold Brew Coffee Contains Less Caffeine, Which Is A Good Thing

Due to the longer steeping process and colder temperature, a cup of coffee brewed in this way will contain less caffeine than a regular cup of coffee brewed in the same way. By infusing the coffee for a longer period of time, it reduces its effective caffeine content.

The reason why it’s good is that too much caffeine can cause your adrenals to react, which spikes your insulin levels and can affect your level of ketosis. Limit your coffee to 2 cups per day max, and you shouldn’t see any adverse effects on your ketone production.

2 – Drinking Coffee Prior to Aerobic Exercise Will Increase Your Fat Loss

According to this study, if you are an endurance athlete or someone who enjoys running, cycling, swimming or any other aerobic exercise, you could lose up to 22% more body fat simply by adding caffeine before your workout.

 

3  – Cold Brew Is Less Bitter And Better For Those With Sensitive Stomachs

When coffee is brewed with hot water, it generally has a higher acidic content than when it is brewed with cold water. Coffee is considered an acidic substance anyway, but being able to reduce the PH levels of coffee might help for those with acid reflux or sensitive stomachs.

4 – Cold Brew Coffee Is Easier And Quicker To Drink

On a hot summers morning or post-ride in the hot sun, the last thing you want to be doing is drinking a hot cup of coffee. Its also much easier to make as well. Not fuss around hot coffee machines, this method is so simple that you can even steep the coffee in a wine bottle overnight, and filter out the grounds when you pour your cup of coffee. It’s that simple.

5 – Coffee has anti-aging effects

According to this study,  “The presence of several bioactive compounds, such as polyphenols and caffeine, implicates coffee as a potential nutritional therapeutic in aging. Moderate (three to five cups a day) coffee consumption in humans is associated with a significant decrease in the risk of developing certain chronic diseases.”

That’s a pretty good reason to have a cup of coffee each day!

6 – You don’t need any fancy equipment

You can get a Cold Brew Coffee Maker which makes your life a lot easier, but you don’t have to have any equipment at all. The only recommendation is that I’d suggest using glass instead of plastic, as the acidic content of the coffee could cause nasty chemicals to leach out of your plastic container.

I use a $9 tea maker from Kmart here in Australia, but it’s up to you (wine bottles also work perfectly as well).
